Pho, pronounced 'fuh', is the national dish of Vietnam. It's a fantastic steaming bowl of rice noodle soup served with fresh herbs.
Pho should never be boring. The most enjoyable aspect of eating Vietnamese food is the DIY act of sampling and enhancing your food as you eat, creating a dish that is distinctly yours - ones' own bowl. Once you've chosen from the menu, you determine the final taste at the table by the extent to which you garnish with the fresh herbs and sauces it's served with. As it comes, chilli hot, full of greens and a squirt of lime - it's up to you.
